We have the privilege of knowing Rene Deleon, (former Expeditor at Alinea, soon to be the new Sous Chef at Next Restaurant) through our friend Greg. Anyway, Rene is staying with Wil right now, and he decided to cook on Tuesday (which is always exciting).
He taught us how to tie a chickens legs together without twine! Simply cut about an inch hole between the leg bone and tendon, and slip the other leg through the hole to hold it in place.
